Looking back it is surprising how many jobs I had in the food business. McDonald's taught me to stay busy, and be neat and clean. Benton's was in Laguna Beach and it taught me that rules are only the start of what guides a restaurant. Even today I marvel at how a restaurant can stay in business with the uncertainty of perishable inventory management and customer tastes, not to mention inflation and the relatively new practice of fickle employees.
